APPETIZERS

- Braised Leek Toast with Whipped Ricotta & Sicilian Anchovies Soft braised leek on grilled sourdough with whipped ricotta, oregano and Sicilian anchovies.
- Butterfly Shrimp Chips Ultra-thin shrimp on rice paper, fried crisp, served with chilli-garlic ranch. Gone before you've decided if you liked them. Order more.
- Chilled Clams with Orange & Chinese Vinegar Steamed and chilled clams with orange, black vinegar, citrus zest, fried garlic and fresh herbs.
- Scallop Crudo with Orange & Burnt Chilli Vinaigrette Sous vide scallops in warm butter and charred Scotch bonnet vinaigrette with orange, cherry tomatoes and lime, finished with flaked sea salt.
- Pinsa Marinara Roman flatbread with slow-roasted tomatoes, pickled anchovies, raw garlic and basil.

- Salina Pesto Spaghetti (VG) Long pasta tossed in an Aeolian island sauce of basil, mint, almonds, capers, roasted tomatoes and aged Parmigiano.
- Seafood Carbonara Long pasta with toasted garlic, chilli flakes, colatura di alici and egg yolk. Not your usual carbonara — the sea is in every bite.
- Sailor's Pasta Pasta with braised cherry tomatoes, Italian tuna, olives, capers and parsley.
- Spicy Prawn & Orange Pasta Short pasta with nduja, tomato concentrate, orange zest, crispy breadcrumbs and garlic.
PROTEINS

- Smoky Shrimps with Green Thunder Charred head-on prawns with crushed herbs, Thai chilli and sour lime. Eat with your hands. Wear something you don't mind.
- Whole Wine-Baked Fish Slow-baked in white wine with coastal aromatics and citrus brine, brought to the table as it comes out of the oven. Today's catch comes from our little kelong off Bintan — a working fishing platform that feeds this experience.
- Sizzling Nemo Cantonese-style steamed fish with capers, orange zest, parsley and anchovy soy, finished with hot oil poured tableside. You'll hear it before you see it.
- Mare Seafood Stew Cuttlefish and mixed seafood slow-braised in tomato soffritto with white wine, garlic and parsley, served with grilled sourdough. The kind of dish that ends with everyone reaching for more bread.
- Chimichurri Cauliflower Steak on Romesco (VG) Grilled over fire, rested on smoky romesco, finished with fresh chimichurri. Our plant-based option — let us know in advance.

- Green Goddess Avocado & Cucumber (VG) Cucumber in creamy avocado-lemon herb dressing, finished with pickled onions.

- Red Goddess Salad (VG) Fresh tomatoes and red onion with parsley, garlic and dijonnaise vinaigrette.

DESSERTS

- Garibaldi Granita (VG) Campari and blood orange granita slowly scraped to order, served ice cold. Adults only. Best after a long dinner with the sea in front of you.
- Hot Frenchie's Strawberries & Mascarpone Cream (V) Fresh strawberries, vanilla whip, basil oil and flaky salt.
- Coffee Spumone (V) Light whipped iced coffee with honey, cocoa and chocolate chips.
- Mid-Summer Mess (V) Crushed pavlova with whipped cream, raspberries, mango, passionfruit curd and pistachios.
